Leonardi's traditional balsamic maker.

Along the banks of the Secchia River, which divides the province of Modena from the Emilia region, the tradition of typical balsamic, boiled grapes and balsamic dressings are world widely known.
Originating near Modena, in the village of Margreta di Formigine, in the 19th century, the Leonardi family began making balsamic that arises from cooked grapes, called must*, on open fire.

In this, more than 100 years old factory, emerged an excellent product respecting all the rules that tradition demands and all the secrets that were and are kept, for generations, the vaults are well air circulated, so that the temperature gets only the necessary changes that are allowed and the barrels are arranged in groups of 9, 12 or 15 pieces. The barrels are made of different types of wood, high quality. Oak, walnut, cherry, juniper barrels, these give the flavor to the balsamic. The Leonardi family with some reliable employees, cultivate the "farm" Campi Macri, choose the grapes for the must*, which is made only from the Trebbiano grape. They also saw to it that the cooking process was and still is slow. Ensuring that decanting, transferring into smaller barrels, is done in the months of January and February. Otherwise, evaporation is too great.

So the best and traditional balsamic is the result of this long process. Balsamic is dark brown in color, has the good texture and has a pleasant, strong, but clearly harmonious, flavorful taste with velvety shadows. The factory, called Accetaia, consists of several rooms where the barrels are stored and where the fermentation, aging and aging of the balsamic takes place.

The Accetaia brings the following products: traditional or flavored balsamic dressings, the traditional balsamic of Modena.
Wines, such as the trebbiano of Modena IGT, Lambrusco of ModenaIGT and Malbo of Modena IGT, the later brought to year in barrels. Marmalades, sauces, Saba come from these.
